I'm unable to delete an image template even though I'm an owner of the complete subscription. The user assigned managed identity is gone but what do I have to do to delete this resource? I have literally tried everything but nothing works. Even before trying anything I already get the message: The assigned managed identity cannot be used. Please remove the existing one and re-assign a new identity. Also this does not work... Thanks in advance!

It is suggested to first verify if there are any dependencies or locks on the resource group or image template that might be preventing deletion.
You can use Azure CLI to remove the managed identity from the image template
az image builder identity remove --name <image-template-name> --resource-group <resource-group-name> --user-assigned <identity-name>
You can also try to do it manually by finding managed Identity associated with the image template
Azure Portal > Image Template > Identity > user-assigned managed identity
Then remove the Managed identity reference in the Image template
Azure portal > Image Template > Identity -- "disable the User-Assigned Managed Identity"
And you can again try to Reassign a New Managed Identity
az image builder identity assign --name <image-template-name> --resource-group <resource-group-name> --user-assigned <new-identity-name>
If the above steps don't work, you can attempt to forcefully delete the resource using Azure PowerShell
Remove-AzResource -ResourceId <resource-id> -Force

None of the commands do the trick and Azure Portal > Image Template > Identity option doesn't appear. Now when I go to the resource I get the following error/warning: Not authorized to access the resource: /subscriptions//resourceGroups/. Please check the user assigned identity has the correct permissions. For more details, go to https://aka.ms/azvmimagebuilderts.
I managed to delete the template finally!

I had to use a different method to solve this. I re-created the user assigned managed identity in the original resource group, made it owner of the resource group the template was in and then I was able to delete the template. Thanks for your support!
