Are changes to a user presence in Teams auditable? For example, if a user changed his presence from Available to Busy, at some specific time in the day, is that change auditable?

    No, there is no audit log record for presence changes. You can query the current presence/status of the user via the Graph API, but there is no historical record to tap into.
